Japanese-Style Salmon
For a healthy lunch, dinner or barbecue, char-grill salmon or mackerel that has been marinated in oriental ginger, soy sauce and sak?
INGREDIENTS:
600g salmon fillets or 2 x 155g mackerel fillets and 300g salmon fillets, skin left on and cut into 4
6 tsp light soy sauce
6 tbsp sake (japanese rice wine)
4cm piece fresh root ginger, finely grated
2 garlic cloves, crushed
1 tsp English mustard
2 tbsp toasted sesame seeds
2 tbsp light olive oil
PREPARATION:
1. Place the fish in a non-metallic dish. Combine the other ingredients (except the sesame seeds and oil). Pass through a fine sieve over the fish, pressing the ginger juices out.
2. After 5 minutes, turn the fish and leave for 10-20 minutes. Lift out and pat dry. Heat the oil in a griddle pan and fry the fish or grill on high for 2 1/2 minutes per side for mackerel and 3 minutes for salmon. Sprinkle with sesame seeds to serve.
